Lemony Thyme Roasted Fish

This lemony thyme roasted fish recipe by the one-and-only Ina Garten  (and ever so slightly adapted by yours truly!) is simple enough for a family weeknight⁣ dinner, elegant enough to serve for a dinner party, and mild enough in flavor to serve to your pickiest eater for a fish exposure (I'd break up the fish into bite-sized pieces, discard the lemon and thyme after roasting, and serve the olives on the side with a fresh lemon wedge or dipping sauce of your choosing).

My youngest Small Fry became an olive convert after nibbling a taste of these super supple and buttery Italian Castelvetrano olives. They taste as if a regular green olive mellowed its bite by soaking up a delicious dose of sunny olive oil!
