Peppino's Garden Salad with Creamy Italian Dressing
Anytime I am back in my old neighborhood where I grew up, I always make a point to stop by Peppino's for this insanely addictive creamy Italian salad dressing. I'm sure the OG version Joe Peppino's Nonna makes is hard to replicate given the magic Italian fairy dust sprinkled into each bite. But my version is juuuust close enough that I can satiate my cravings when getting to Peppino's is not in the cards
If you have never made homemade dressing before I strongly encourage you to try this one! To me, most bottled dressings taste lifeless and bland, and since this one only takes three minutes to whisk up, why reach in the fridge for a crusted-over bottle of disappointment?
Kids love to see the emulsion process (combining an acid and fat) and the scientific reaction that occurs between the olive oil and the vinegar even intrigues kids who have no interest in cooking. In my experience, salad gets gobbled up by even the pickiest of critics when they make their own homemade creamy Italian dressing!
