Candied Almond Chopped Salad

Cornucopia Salad with watermark-3.jpg

Sometimes, I eat a “healthy” salad (read, not-that-fun😒👎) because I am feeling the gluttonous overload of a, particularly indulgent week. Striking some semblance of balance to even out my caloric adventures

This salad is definetly NOT for those days!

My candied almond chopped salad is addicting in its own right, thanks to the addition of pan-fried candied almonds (swoon!). Give me a day to cook this recipe with your Small Fry, and I may have a salad convert in the making! Only if they eat the sugary candied nuts, they are still in the beginning stages of picking their way thru SALAD, people!

I never thought I could say I "crave" salad, but people do CRAVE this recipe. I make it often for pot luck parties, barbeques, cook-outs, and gatherings with our family and friends. I don't think I have left a party without someone asking for the recipe.

The origins of this recipe come from my Mom and her motley crue of culinary sharks from the 1970s. The original recipe name was "cornucopia salad" ( I mean, how '70s is that name!). My mom surrounded herself with women who loved to entertain and cook at home, and as a result, I benefited greatly from all the delicious offerings that came my way.

I am delighted to share this intoxicating salad recipe with you. I hope you enjoy!
