Killer Gazpacho

I know what you're thinking. Cold, VEGETABLE soup for kids?

You're CRAZY!

Just trust me, if you're kids will dip a chip into a fresh bowl of salsa, I'm willing to bet they will give this refreshing summertime staple a try.

This Killer Gazpacho recipe (originally made at Salamungdi's restaurant in South Coast Plaza) is perfect for kids given the ample dose of "body" this soup has with the addition of vinegar-soaked bread. The original version called for French bread, but the kids enjoy the sweet notes the King's Hawaiian rolls, so I usually use that in lieu of French bread, along with keeping a wide selection of fun, and colorful toppings handy.

Giving kids the creative outlet to customize their own bowl of gazpacho can make a boring bowl of soup fun. I always have sliced avocados, sour cream, cheese, diced up tomatoes and cucumber, green onions, and yes, CHIPS! And don't worry if those corn chips act as a spoon for your kiddos (or yourself!).
