Turkey "Sushi" Rainbow Rolls with Creamy Basil Ranch Dressing

These days it seems like everything in our house is rainbows, unicorns, and llamas! I know I’m not the only parent who is living through this trend, and I say, “embrace what the kids are into!” and channel their love of rainbows in my carefree and colorful, turkey “sushi” rainbow rolls with creamy basil ranch dressing. The name sushi is a bit of a misnomer in that there isn’t any raw fish, nori, or rice in this recipe. Rather, the end result is basically a turkey wrap that looks like sushi and seeing the colors burst onto the kids' plate the first time you cut into one of these veggie rainbows is truly fun to watch unfold!

These vibrant little beauties get their rainbow colors from my super simple “veggie sprinkles”.  A trip to the salad bar at your local grocery store and a quick spin through your handy-dandy food processor at home will create thin strips of colorful veggies I affectionately call “sprinkles”.

Depending on the time of year, the colors can get pretty creative! I love bringing a skeptical Small Fry over to a beautiful display of fresh veggies and ask them to pick out the colors they want to see in their turkey “sushi” rainbow roll. Sometimes, we just pick carrots (and that’s OK!) other times, I end up with an odd smattering of olives, pickled peppers, and cheeses, but either way, if they think it looks good, they may find it TASTES good, too.

This recipe calls for whipped cream cheese that I add sliced green onions to for added interest. Kids ALWAYS say they think anything in the onion family is “gross” but green onions are so mild in flavor they are the perfect introduction to the onion family without being overpowering.

Don’t be scared to try this with your kids; the cream cheese alone mellows the flavor of the green onion, and I’ve witnessed hundreds of kids who initially complain about the green onions come asking for a second helping of my rainbow rolls! As a last resort, just start with the dark green tops of the onion; they have the least amount of onion flavor and you are still earning credit in my book for exposing your kids to the onion family.

In my experience, kids LOVE to dip and dunk food into some sort of sauce, so I love making an herb-packed creamy basil ranch dressing as a complement to the rainbow rolls. If you have never made homemade ranch before, TRUST ME, the difference is like night and day. One taste of this homemade ranch, and I’ll have you swearing off the bottled processed stuff in two shakes of a lamb’s tail; lilpinkies promise!
